Beef pie with oatmeal and eggs

Oatmeal porridge
  • 60g Meesters van De Halm oatmeal
  • 300g minced meat
  • pinch of pepper and salt
  • olive oil
  • 1/2 el red pepper sauce
  • 250g tomatoes
  • 8 puff pastry
  • 4 eggs

Preheat the oven to 200 degrees Celcius. fry the beef in a frying pan and add a pinch of salt and pepper.

add the oatmeal and red pepper sauce to the beef. Cut the tomatoes into small cubes and add these as well.

Put 2 of the puff pastry sheets on one another (slightly turn them so you create a star shape) and use a rolling pin to get a bigger surface. Fold in the borders of the pastry. If the sheets are too sticky you can use a bit of flour to make them easier to roll out.

Fill the puff pastry sheets with the beef mixture while creating a pit in the middle. In here you crack the egg. Put into the oven for about 20 min. Serve it with a fresh salad on the side. Enjoy!

Bak de taartjes in 20 min gaar. Je kan er eventueel nog een lekkere frisse salade bij serveren. Smakelijk!
